Spicy Marinated Flank Steak
This is a delicious marinade for beef steak. During the holidays I use this recipe to marinade our Christmas day beef tenderloin which is simply fabulous. But since I can’t always have beef tenderloin, I decided this marinade would be perfect for other cuts of beef like the flank steak.
- 2 cloves garlic, crushed and chopped
- ½ tsp. Pepper
- ½ tsp. hot sauce
- ½ cup soy sauce
- ¼ cup olive oil
- ½ cup port wine
- 1 tsp. dried whole thyme
- 1 bay leaf
- 1 2 lb. flank steak
In a large resealable plastic bag, combine first 8 ingredients. Add steak and refrigerate overnight turning occasionally. Remove steak from marinade and discard marinade. Place steak on a preheated hot grill and cook for about 4- 5 minutes on each side for medium rare. Remove from the grill and allow steak to rest for 5 minutes. Carve steak in ¼ inch slices diagonally across the grain. Serves 3-4.
Note: Do not overcook flank steak. It’s best rare or medium rare. If flank steak is cooked medium or well done, it becomes extremely tough and dry.
